For our last week in Utah, we’re camping just north of St. George at Quail Creek State Park in Hurricane. It’s a small park with 23 sites, all have covered picnic tables, firepits and grills. Even though it’s been hot this week, everyone seems to want to have a campfire at night. Lucky for us the sites are pretty far apart so we haven’t been bothered by the smoke. Thanks to Pam for recommending the nearby Farmers Market in Laverkin for groceries where I was able to pick up some good produce! Dinner Last Night:Millet with white beans and pesto.
