This week, we’ve been hiding out behind these trees and camping for free at Scott Reservoir in the Apache-Sitgreaves National Forest. When I think of forests I think of tall trees, but here they’re all pretty short. We haven’t done too much exploring, but have enjoyed the path that goes across the lake. Dinner Last Night: This week has been challenging because I don’t have a menu planned. Last night I was stuck for ideas and had some left-over rice and kabocha squash. We ended up having black bean & rice burgers with lettuce and tomato and some roasted squash.
